1 part smoked pineapple syrup
1 part triple sec
.5 part apple juice (the clear kind)
1.5 parts tequila
squeeze of 1/2 lime
Brush a neutral oil on the grill.
Add 1 small pinch of slat per slice.
Grill pineapple on high heat until grill marks are visible on both sides of the pineapple.
Remove from grill and place in a blender.
Blend until smooth.
Pass the mixture through a fine mesh strainer to remove any fibrous residue.
Combine rendered liquid with a simple syrup mixture of 1:1 sugar and water. (the consistency should have some viscosity)
Add all ingredients to a shaker.
Shake until well frosted.
Pour over ice.
Garnish with grilled pineapple.
We shared the history of the margarita with our Sorberita! We could not get enough of playing around with the Margarita. This time we expanded the flavor index by creating a grilled pineapple simple syrup. Grilling the pineapple added a dimension of flavor that your palate will ask, "Why didn't I explore this sooner?"
